Ultimate Tiramisu

Last night was so magical. We, me & my boyfriend, had our pre-Christmas celebration. Unfortunately, without the Christmas tree. But hopefully, next year we will have some. That’s the struggle of not-living-together couples.

However, we had everything else. Christmas songs were on, 2 Christmas movies seen, cookies at the table, champagne all night long. Lovely gifts given from heart. What more I could wish for…

To make this night a bit special than other, I decided to prepare an amazing tiramisu dessert.

This recipe is so easy, really fast and absolutely delicious. It took me max. 15 mins, min. 2 hours/ best through the night in the fridge and there you have it.

I hope you will enjoy it as we do.

INGREDIENTS

  • 1 heavy cream
  • 1 package of Philadelphia cream cheese
  • 50g of powder sugar
  • 2 packages of long biscuits
  • 1 espresso
  • Little bit of rum
  • Cocoa powder

Whisk the heavy cream, add to it Philadelphia spoon by spoon and mix it slowly.

Add there sugar and gently mix it.

In a separate bowl, mix Espresso with a bit of rum and a bit water. I added vanilla as well. Then make a little bath to the biscuits and place then to the glass container or cake form.

Should look like this.

Then poor the cream over the biscuits. Add another layer of biscuits, then the layer of cream.

On the top splash cocoa powder. Let it cool in the fridge for min.2 hours. Best overnight.

14 days to Christmas 🎄

Well,well… I can already hear the jingle bells. My favorite time of the year!

Since I was a little girl, I was amazed by all of the traditions which we have in my country.

Christmas is not just normal holiday season, it is so much more. I remember how my aunt used to bake dozens of cookies and cakes and I was always watching her and learning how to bake. At that time started my love for baking.

I’m happy that I still have somebody to bake for. My amazing boyfriend is always my test person… even though is not so much into the cakes, he is more of a steak person. But the love for food is what we share both.

So, this weekendI tried to bake something what he really loves. The traditional vanilla crescents.

Surprisingly, this cookie is my dad’s favorite too.

I tried to find the perfect, exact, traditional Austrian recipe, so when he really feels like home.

And the results? He loved them!

Ingredients

  • 280g flour
  • 200g butter
  • 100g almonds
  • 80g powder sugar
  • Vanilla/vanilla sugar

This time I used the vanilla Pate, the flavor was really more intense.

Mix all ingredients well.

Add one egg yolk.

The dough should look like this after. Let it rest on a cold place for 2 hours.

Then cut the dough to the same size, roll it and form a crescent.

Bake it at 170 degrees for 12-15mins. Depends on the size.

When they are still warm, coat it with mixture of powder sugar and vanilla.

Filling bean soup for body and soul

Did you ever try bean soup with plums?

If you are from Slovakia then I’m sure you did.

Sour-sweet bean soup is one of my favorite ones. It is an amazing source of proteins!

Me personally, I can not eat meat everyday, for me is enough 2-3x a week. And as a perfect protein option I use the beans very much.

At home, my Mami usually makes this kind of soup with the lentils. I tried it with the beans in Nitra, it was my University city.

I guarantee you an amazing, warming soup for your body and soul…

We will need:

1 cup of white beans/lentils

Black pepper

2 bay leaves

2 potatoes

6 plums (dried/frozen)

1/2 onion

Olive oil

150 ml heavy cream

1/2 lemon

Salt

Place your beans to a big pot with water, let it cook till you see this white foam on the top. Remove all of it.

Add pepper and bay leaves, let it cook for about 20-30 mins slowly.

When are the beans half cooked, add to them chopped potatoes and dried plums.

Time to make our soup thicker.

On a hot pan, heat like 2-3 spoons of olive oil, add the onion and cook for a while. Then add 1 spoon of flour and mix well.

That’s the consistency which we are looking for. Now add this mixture to the boiling soup and mix well.

At the end, add to the soup lemon juice, cook for few seconds and after that add the heavy cream.

Season it well with salt and pepper.

And there you go, delicious, easy, winter filling soup ❤️

Old fashioned pumpkin soup 🎃 

I remember the first day when I tried the pumpkin soup so well. It was exactly 2 years ago by my Aupair hostfamily here in Switzerland. 

I never had it before, my Mami is not such a big fan of creamy soups. 

Well, thanks to this family I felt in love with it. And it’s one of my favorite soups of all time. 

The preparation is very easy and fast, in 5 mins is all work done, then you can chill for about 15-20 mins and blend it well at the end. All done ✅ 


Peel the skin off, put the seeds away and cut the pumpkin to bigger chunks. 


Add a piece of butter to a preheated saucepan and roast half onion, add to it few potatoes and 500g pumpkin. 

Sprinkle it with salt,pepper. 


My secret ingredient is an apple. It gives the soup this nice sweet& sour taste. 

Pour over it vegetable stock and let it cook for about 15-20 mins. 



Blend it well and add some sour cream, Creme fresche or little bit of heavy cream to make it softer.

Switzerland

Other side of glamorous Swiss Life 

Another week is slowly over, time will change again this night and I’m wondering why is my life flying so fast for last 3 years… 

Living and working in Switzerland have changed my life extremely. 3 years ago I was this free, enthusiastic, spontaneous happy university student girl who was thinking that can change the world. I had the power to do that. Loved to travel, explore the world and the most importantly- enjoy the life. However, reality is right now completely opposite. 

I feel like the world changed me completly. I lost my enthusiasm, my positive problem-free attitude, lying in the bed with no mood to do something. Feeling lonely in in this “perfect” swiss environment. 


All of the people in Slovakia thinks that when you work in Switzerland it automatically means that you earn 5000€ per month and are living like a king here. Unfortunately, true is not so nice. 

Just to find a job is hard here, you need to speak good German and sometimes even to have school for a cleaning job. 

When you have the luck and find some job, the other thing with you struggle is finding an apartment. Normally, young people live here in a shared flat, where the rent for one empty room in Zurich area is around 600-1000. 

But there is a lot more stuff to deal with… 

Anyways, it’s nice to have this experience, cause after all of it I will cherish my slovak home even more, my family and friends…

Farmer’s lunch 

Do you like bacon? Onion? 

And what about potatoes? 

If your answer is yes than welcome to the club! This simple dish is inspired by my grandfather, who cooked it very often. 

So let’s get started…


For this lovely dish will need: 

  • 2 potatoes 
  • 1/2 onion 
  • 2-3 spoons of bacon 
  • Little bit of fresh garlic 
  • 1/2 Zucchini 
  • Salt, pepper, smoked paprika 
  • Anything else what you want


On a little bit of olive oil bake cooked potatoes with onion, zucchini and garlic. Add the spices to it. 


Bacon time… after about 5 mins add to the pan the chopped bacon and fry till it’s crispy. 


Serve with the fresh herbs and enjoy 🍀

My apple pie weekend memories 🍏

After a very long time, I could finally meet my aupair friend and talk a little bit bout our girl’s problems… I had to use S at the end of the word, cause any girl has just 1 problem. And after glass of wine, you have them XY, well, you know it all… 

We had a great wether, even though it’s October and we are in Switzerland. Sun was shining, warm breeze was touching our faces and bottle of wine was getting more and more empty. 

“Life is beautiful” – this is the sentence that I said to myself silently and thankfully. 

But after some time, I got hungry 😁 well, that’s so me. Our next stop was my balcony where I brought the freshly made apple pie. 

I can tell you, for me it was gastronomical highlight of the day… True taste of fall 🍁 


Ingredients

  • 1 pre-made pie dough 
  • 4 spoons of crushed hazelnuts or almonds 
  • ca. 4 apples in slices 

Cream

  • 2,5 dcl whipped cream
  • 2 eggs
  • 4 spoons of sugar
  • 1-2 spoons of vanilla sugar or cinnamon 
  1. Put the dough to the baking form. Sprinkle it with nuts.
  2. Place there all around apple slices. 
  3. In a bowl mix well all of the cream ingredients. 
  4. Pour it over apples and let it bake for about 35 mins at 180 degrees. 


The best is to serve it with fresh whipped cream. Delicious!

Sunday Lemon Cake 🍋

Sunday again, sun is shining, autumn is officially here and I need something sweet to make me feel better. 

You know, nanny job is quite hard one. Even though, I finally finished my new room, so it was not hard just mentally as well as physically. 

So, I decided to bake an amazing fresh and moist lemon cake. 🍋 

Hope you will like it as well I do. It’s just delicious ! 

INGREDIENTS

Loaf

2 large eggs

1/2 cup granulated sugar

1/2 cup sour cream or Greek yogurt 

1/4  vegetable oil

2 tablespoons lemon zest

1 to 2 tablespoons lemon extract

1 cup all-purpose flour

1 tsp baking powder

Glaze

1/2 cup confectioners’ sugar

1 1/2tablespoons lemon juice, or as necessary for consistency 


Mix together eggs with sugar till it’s smooth and change the color to the light yellow. 


Add there all of the wet ingredients, as well as lemon zest. 


Now it’s time for the dry ingredients… 

Mix it all well and let it bake for about 30 mins at 180 degrees. 

When is the cake done and still little bit warm, make some little holes with the fork on the top and splash there some fresh lemon juice. 

Let it sit and completely cool down. 

Mix the lemon juice and sugar for the glaze and pour it over the cake. Let it some for some hours.

Healthy Oatnana cookies 🍪 

Oatnana? You don’t know about it? All you need are ripe bananas and oats to create this yumminess. 

I love to eat sweets, actually I think that I am addicted 😁 Because of this I said to my self that from time to time I will eat some healthy sweets instead of the killer-sugary ones 🙏🏻 


Ingredients

  • 2 ripe bananas 
  • 1 cup of oats 
  • 1 egg 
  • 1 tsp baking powder 
  • Chocolate chips (optional) 
  • Raisins (optional)
  • Cinnamon (optional) 

Mix all together and form a little cookies. 

Bake in a preheated oven at 175 degrees for about 30-40 mins.

Tuna Spaghetti Saturday🍝 

Autumn is officially here 🍂 

It’s been 3 days full of rain and cold weather already. Honestly, fall season is something what I appreciate very much. Colors are everywhere! Nature is the best artist so let enjoy it ❤️ 

On the other hand, the lazy time is here too. I’m so sleepy and without energy and it not even bothers me a bit… 

Because of this I cooked me something extra fast, extra tasty and extra big portion when the bikini season is over 😁

Ingredients 

  • 150g Spaghetti 
  • 1 small can of tuna 
  • 1 garlic glove 
  • Chilli flakes 
  • Tomatoes (as much you like) 
  • Olive oil 
  • Salt, pepper 
  • Parmesan 
  • Fresh Basel 
  1. Preheat the pan and put there a splash of olive oil. When it’s hot add the chilli flakes and garlic in. 
  2. Roast it till golden. Add there our tomatoes, salt and pepper. Maybe add some water if it starts to burn. 
  3. In a meantime cook your Spaghetti.
  4. Now it’s time for the tuna warrior. Add it to our sauce and leave it to cook for about 3 mins. 
  5. All is done, take your spaghetti out of the saucepan and add it to the sauce. Mix it well and serve with Parmesan and fresh Basel on the top! 
  6. I guarantee you a heavenly tasteful lazy lunch 🎉
